Winter Israeli Salad
Crunchy, colorful, and bursting with brightness — a fresh take on a classic, perfect for colder months.
Ingredients
3 cucumbers, diced
1–2 large tomatoes, diced
1/2 red onion, diced
1 cup pomegranate seeds
Small handful of parsley, chopped
1 lemon, juiced
A good drizzle of olive oil
Maldon salt, to taste
Instructions
Combine the Ingredients
In a large bowl, combine the cucumbers, tomatoes, red onion, pomegranate seeds, and parsley.Season the Salad
Squeeze lemon juice over the mixture, drizzle generously with olive oil, and sprinkle with Maldon salt to taste.Toss and Serve
Toss gently to combine. Adjust seasoning if needed, and serve immediately!
