Winter Fruit Salad
Bright, juicy, and crisp — this is winter produce at its most refreshing.
Ingredients
1 head Castelfranco lettuce (or any butter lettuce)
6 leaves radicchio, thinly sliced
1 small fennel bulb, thinly sliced
1 orange, peeled and segmented
1 grapefruit, peeled and segmented
1 persimmon, thinly sliced
1/2 cup pomegranate seeds
Small handful of fresh mint, chopped
Juice from the leftover orange and grapefruit segments
A good drizzle of olive oil
Maldon salt, to taste
Fresh cracked pepper, to taste
Instructions
Combine the Ingredients
In a large bowl, gently toss together the lettuce, radicchio, fennel, citrus segments, persimmon, pomegranate seeds, and mint.Add the Dressing
Squeeze the juice from the leftover orange and grapefruit membranes over the salad. Drizzle with olive oil, then season with Maldon salt and cracked black pepper.Toss and Serve
Gently toss everything together to combine. Serve immediately and enjoy!
