Veggie Sandwich
A fresh, colorful stack of crisp vegetables and creamy hummus layered between wholewheat toast—perfect for lunch or a hearty snack.
Ingredients
2 slices of wholewheat bread
Hummus
1 carrot, peeled and shredded
1 cucumber, peeled and thinly sliced on a mandolin
½ tomato, sliced into half-moons
½ avocado, sliced
½ red onion, thinly sliced into half-moons
Handful of fresh sprouts
Instructions
Toast the Bread
Toast both slices of bread to your preferred level of crispness.Prep the Vegetables
Wash and prepare all the vegetables. Shred the carrot, slice the cucumber, tomato, avocado, and red onion.Assemble the Sandwich
Generously spread hummus on one slice of toast. Layer the veggies in this order: shredded carrots, cucumber slices, tomato, avocado, red onion, and sprouts. Spread more hummus on the second slice of toast and place it on top.Finish and Serve
Slice the sandwich in half and enjoy immediately.
