Vegetarian Breakfast Sandwich
A hearty morning bite layered with crispy egg, buttery avocado, and savory plant-based sausage.
Ingredients
2 slices sourdough bread
1 Beyond Meat sausage, butterflied
1 large egg
Avocado, sliced
Olive oil
Salt and black pepper
Hot sauce, for serving
Instructions
Toast the Bread
Toast the sourdough slices to your preferred level of crispiness and set aside.Cook the Sausage
Heat a small pan over medium heat with a little olive oil. Cook the sausage slices for about 4 minutes on one side, then flip and cook for 3 more minutes. Remove from pan and set aside.Fry the Egg
Wipe out the pan and increase heat to medium-high. Add a touch more olive oil. Once hot, crack in the egg and season with salt and pepper. When the edges are crispy and the white mostly set, tilt the pan and spoon hot oil over the top to finish cooking the yolk without flipping.Assemble the Sandwich
Layer the sausage, egg, and avocado between the toasted sourdough slices. Drizzle with your favorite hot sauce.Serve
Slice in half, serve warm, and enjoy immediately.
