Tzatziki
A cooling, herby yogurt dip that comes together in minutes — perfect as a side, sauce, or snack on warm days.
Ingredients
1 cup Greek yogurt (or coconut yogurt, if preferred)
1 small Persian cucumber, with the skin
1 garlic clove, minced
Juice from 1/2 lemon
Salt, to taste
Handful of fresh chopped dill, mint, and parsley

Prepare the Cucumber
Grate the cucumber using a box grater. Squeeze out the excess water using your hands or a paper towel — this helps keep the tzatziki thick and creamy.Combine the Ingredients
In a bowl, stir together the yogurt, grated cucumber, garlic, lemon juice, salt, and chopped herbs.Taste and Adjust
Mix well and taste. Adjust the salt or lemon as needed. Top with a little extra fresh herbs before serving.
