Tuna Lettuce Wraps
A light, flavor-packed lunch that comes together fast — crunchy, creamy, tangy, and totally satisfying.
Ingredients
1 (6 oz) can of oil-packed tuna, drained
2 teaspoons capers, chopped
2 teaspoons cornichons, finely chopped
¼ red onion, grated
2 teaspoons lemon juice
1 teaspoon cilantro, chopped
6 tablespoons vegenaise or mayonnaise
2 teaspoons Dijon mustard
Salt and pepper to taste
6 butter lettuce leaves
Cucumber, cut into thin strips on the bias
Spicy mustard, to taste
Extra cilantro, for topping (optional)
Instructions
Make the Tuna Salad
In a medium bowl, combine the tuna, capers, cornichons, red onion, lemon juice, cilantro, mayonnaise, Dijon, salt, and pepper. Mix well with a fork.Prep the Lettuce Wraps
Stack two lettuce leaves for each wrap. You’ll make three total.Assemble
On each lettuce stack, add a few cucumber strips, a smear of spicy mustard, and a generous spoonful of tuna salad. Top with extra cilantro if using.Serve
Enjoy right away, ideally with a splash of hot sauce.
