1 lb salmon, preferably wild, cut into 2 pieces
1 tablespoon olive oil
Salt and black pepper, to taste

Preheat the Oven
Preheat your oven to 500°F.Prep the Salmon
If you prefer to rinse your fish, do so under cold water and dry thoroughly with a kitchen towel — moisture will prevent the skin from crisping. Place the salmon skin-side down on a parchment-lined baking sheet.Season and Roast
Rub the salmon with olive oil, making sure it’s evenly coated. Season generously with salt and pepper. Roast for 15 minutes.Serve
