Superfood Seeded Granola
A crunchy, deeply nourishing blend of oats, seeds, and spices—perfect for topping yogurt or snacking straight from the jar.
Ingredients
3 cups gluten-free oats
1 cup shredded coconut
3/4 cup sunflower seeds
3/4 cup pumpkin seeds
1/2 cup hemp seeds
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 cup maple syrup
1/2 cup olive oil
1 cup goji berries
Salt, to taste
Instructions
Preheat the Oven
Preheat your oven to 300°F (150°C).Mix the Dry Ingredients
In a large bowl, combine the oats, coconut, sunflower seeds, pumpkin seeds, hemp seeds, cinnamon, cardamom, and salt.Heat the Wet Ingredients
In a small saucepan over medium heat, warm the olive oil and maple syrup until they begin to bubble. Remove from heat.Combine and Bake
Pour the warm liquid over the dry ingredients and mix thoroughly. Spread the mixture evenly onto a baking sheet and bake for 30–35 minutes, stirring every 10 minutes, until golden and crisp.Add Goji Berries and Cool
Remove from the oven, stir in the goji berries, and adjust salt if needed. Let the granola cool completely before storing in jars.
