Spicy and Salty Nut Clusters
A sweet-salty treat with a kick — dark chocolate, juicy dates, and toasted nuts in every crunchy bite.
Let’s talk nuts — you’ve got a few options with this one. You could go raw (not ideal), use dry roasted (great choice), or roast your own. If you go that route, roast the nuts in a 350°F oven for 5–7 minutes, keeping a close eye so they don’t burn. Let them cool before using.
Ingredients
1½ cups good quality dark chocolate
½ cup cashews
½ cup pistachios
½ cup juicy dates, cut into bite-size pieces
⅛ teaspoon (or a pinch) cayenne pepper
1 teaspoon Maldon salt
Instructions
Melt the Chocolate
Bring a small pan of water to a boil. Place a heatproof bowl over the top (without touching the water) and turn the heat down to a simmer. Add the chocolate to the bowl and stir occasionally until melted. Remove from heat.Mix the Ingredients
In a medium bowl, combine the cashews, pistachios, and chopped dates. Pour the melted chocolate over the mixture and stir well to coat. Add the cayenne and Maldon salt, mixing again until everything is evenly coated.Form the Clusters
Using a medium spoon or scoop, drop small clusters onto a parchment-lined plate or baking sheet. Sprinkle with a little extra Maldon salt.Chill and Set
Place in the fridge for about 20 minutes until the chocolate has fully set. Makes about 12 clusters.
