Pronto Garbanzo Bean Salad
A fresh and speedy salad that hits all the right notes — crunchy, creamy, zippy, and totally satisfying.
Ingredients
1 can garbanzo beans
4 Persian cucumbers, peeled and quartered
2 scallions, thinly sliced
¼ cup mint leaves, gently torn
3 tablespoons feta (omit for vegan option)
Dressing
Juice from 1 lemon
3 tablespoons avocado oil
1 teaspoon honey (or sub agave for vegan option)
Salt and black pepper
Instructions
Prep the Base
Rinse the garbanzo beans under cold water and dry thoroughly. Transfer to a serving bowl along with cucumbers and scallions.Make the Dressing
In a small bowl, whisk together lemon juice, avocado oil, honey, salt, and pepper until well combined.Assemble the Salad
Pour about three-quarters of the dressing over the salad and toss gently to coat. Top with mint and feta. Drizzle the remaining dressing over the top and finish with a pinch of Maldon salt.
