Perfect Summer Salad with a Lemon Vinaigrette
Crisp greens, juicy tomatoes, sweet peach — finished with a light, bright lemon dressing.
Ingredients
3 cups arugula
1 peach, very thinly sliced
1 can garbanzo beans, rinsed and dried
1½ cups cherry tomatoes, halved
4–5 radishes, very thinly sliced
For the Dressing
Juice of ½ lemon
1 tablespoon white wine vinegar
1 teaspoon honey
1 medium shallot, minced
¼ cup olive oil
Salt and black pepper, to taste
Instructions
Make the Dressing
In a small bowl, whisk together the lemon juice, vinegar, honey, shallot, olive oil, salt, and pepper until emulsified.Toss and Serve
In a large bowl, combine the arugula, peach, garbanzo beans, cherry tomatoes, and radishes. Drizzle with the dressing and toss gently. Serve immediately.
