Peas with Butter and Mint
A quick, classic side that’s as fresh as it is nostalgic — sweet peas tossed in melted butter and topped with fragrant mint.
Ingredients
1 lb frozen or fresh peas
2 tablespoons butter
Handful of fresh mint, chiffonade
Pinch of salt
Instructions
Boil the Peas
Bring a pot of salted water to a boil. Once boiling, drop in the peas and cook for 3 to 4 minutes, until just tender.Butter and Season
Drain the peas and transfer to a serving dish. Stir in 1 tablespoon of butter and a pinch of salt until melted and combined.Garnish and Serve
Top with the remaining tablespoon of butter and the fresh mint. Serve warm.
