Orange Ginger Cookies
Deeply spiced, subtly citrusy, and studded with dark chocolate — these cookies strike the perfect balance of cozy and bright.
Ingredients
2 cups organic all-purpose flour
4 teaspoons ground ginger
1/2 teaspoon nutmeg
1 teaspoon baking soda
1 teaspoon salt
6 oz dark bittersweet chocolate, finely chopped and divided
1/4 cup unsulphured molasses
3/4 cup brown sugar
1 tablespoon freshly grated ginger
1 tablespoon orange zest
1 stick unsalted butter
1 egg
Brown or Turbinado sugar, for sprinkling
Instructions
Preheat the Oven
Heat your oven to 350°F and line a baking sheet with parchment paper.Mix the Dry Ingredients
In a medium bowl, sift together the flour, ground ginger, nutmeg, baking soda, and salt. Whisk to combine and set aside.Combine the Wet Ingredients
In a large bowl, add 2 oz of the chopped chocolate, molasses, brown sugar, fresh ginger, and orange zest.Melt the Butter
In a small saucepan, melt the butter over low heat. Remove from the heat as soon as it’s melted and whisk it into the bowl of wet ingredients. Whisk in the egg until smooth.Make the Dough
Gradually fold in the dry ingredients until just combined — don’t overmix. Fold in the remaining 4 oz of chopped chocolate.Scoop and Bake
Using a 1-inch scoop, drop cookies onto your prepared baking sheet, leaving space for them to spread. Sprinkle with brown or Turbinado sugar.Bake and Cool
Bake for 8–10 minutes, or until the cookies are soft to the touch but do not collapse. Cool on the tray for a few minutes before transferring to a wire rack.
