Ingredients
For the Fish
1 lb Mahi Mahi fillets
2 tablespoons olive oil, divided
Juice from 1/2 lime
Salt and pepper
For the Salsa
1/2 ripe mango, diced small
1 tomato, diced small
1/2 avocado, diced small
1/2 jalapeño, seeds removed and minced
Small handful of cilantro, chopped
Juice from 1 lime
1 tablespoon olive oil
Salt and pepper
Instructions
Marinate the Fish
In a small bowl, combine 1 tablespoon of olive oil, lime juice, salt, and pepper. Rub over the Mahi Mahi fillets and set aside to marinate for 10 minutes.Make the Salsa
In a mixing bowl, combine the mango, tomato, and jalapeño. Add cilantro, lime juice, olive oil, salt, and pepper. Mix well, then gently fold in the diced avocado to avoid mashing. Set aside.Sear the Fish
Heat a Staub fish dish or cast-iron skillet over high heat. Add the remaining 1 tablespoon of olive oil. Once hot, carefully place the fish in the pan. Season with salt and pepper and sear without moving it for about 5 minutes, or until a golden crust forms.Finish Cooking
Gently flip the fish using a fish spatula. Add a little more salt and pepper, cover with a lid, and cook for another 2–3 minutes, or until the fish flakes easily with a fork.Serve
Plate the Mahi Mahi and top generously with the mango-avocado salsa. Serve immediately with rice, warm tortillas, or a crisp green salad.
