Basic Pickling Ratio
For every 1 cup of liquid:
3/4 cup vinegar (champagne or white wine vinegar for a lighter flavor)
1/4 cup water
1 tablespoon sugar
1 1/2 tablespoons salt
Adjust sugar and salt to taste for sweeter or saltier pickles.

Red onions, carrots, cauliflower, and corn are great starting points — but almost any vegetable works.
