Herby Cucumber Radish Salad
A bright, refreshing side that’s all about crunch, herbs, and zing — perfect for picnics or a hot summer dinner.
Ingredients
For the Salad:
5 cucumbers
1 bunch radishes
3 spring onions
Handful of basil
Handful of mint
Handful of dill
For the Dressing:
1 clove garlic, minced
1/2 teaspoon Dijon mustard
1/2 teaspoon Aleppo pepper
3 tablespoons Champagne vinegar
1/2 cup good olive oil
Salt and pepper, to taste
Instructions
Prep the Vegetables
Use the side of a large knife to gently smash the cucumbers, then chop into bite-sized pieces. Add to a serving bowl. Roughly cut the radishes and thinly slice the spring onions on the bias, then add both to the bowl.Chop the Herbs
Roughly chop the basil, mint, and dill. Add them to the bowl with the vegetables.Make the Dressing
In a small bowl, whisk together the garlic, Dijon mustard, Aleppo pepper, vinegar, olive oil, and a good pinch of salt and pepper. Taste and adjust as needed.Combine
Pour the dressing over the salad and toss gently to combine everything.Serve
Serve right away, or let it chill in the fridge for 10–15 minutes to allow the flavors to meld. Enjoy!
