Heavenly Tarragon Salad Dressing
A bright, herb-packed vinaigrette inspired by my friend Sunny’s go-to — it’s become a staple in my fridge.
Ingredients
1 large shallot
3 tablespoons sherry or red wine vinegar
1 tablespoon Dijon mustard
½ tablespoon honey
¼ cup chopped tarragon and chives
½ to ¾ cup olive oil
Salt and pepper
Instructions
Soften the Shallot
Mince the shallot and place it in a jar with the vinegar. Let sit for 5 minutes to soften.Add the Flavorings
Mince the herbs. Add mustard, honey, tarragon, chives, salt, and pepper to the jar.Shake to Combine
Pour in the olive oil, secure the lid, and shake well until fully emulsified.Taste and Adjust
Adjust with more salt or honey as needed. Use less oil for a thicker dressing, more for a lighter one.Serve or Store
Use right away or store in the fridge. Works beautifully on greens or as a marinade.
