Halibut in Parchment Paper
Light, delicate, and full of flavor — steamed in its own juices with spring vegetables.
Ingredients
4 halibut fillets (about 6 oz each)
1 leek, cleaned and thinly sliced
1 handful asparagus, cut into 1-inch pieces
3 garlic cloves, thinly sliced
1 handful cherry tomatoes, quartered
¼ cup white wine
4 teaspoons olive oil
Salt and black pepper, to taste
Instructions
Preheat the Oven
Preheat to 400°F. Prepare four large sheets of parchment paper.Assemble the Parcels
For each portion, place a small handful of leeks in the center of the parchment. Lay a fillet of halibut on top. Add garlic, asparagus, tomatoes, and a little more leek on top.Add Flavor
Drizzle 1 tablespoon of white wine and 1 teaspoon olive oil over each parcel. Season with salt and pepper.Fold and Seal
Fold the parchment paper over the fish and crimp the edges tightly to seal. (If needed, search online for “how to fold fish in parchment” for a visual.)Bake and Serve
Place the sealed parcels on a baking sheet and bake for 12–15 minutes. Remove from the oven and let rest for 5 minutes before opening. Serve directly in the parchment for a beautiful presentation.
