Gluten-Free Berry Crumble
A cozy, fruit-filled dessert with a nutty oat topping — best enjoyed warm with a scoop of ice cream.
Ingredients
6 cups mixed berries (blueberries, raspberries, blackberries)
1 cup plus 1 tablespoon gluten-free flour, divided (I use this flour)
½ cup gluten-free oats
½ cup finely chopped pecans
¾ cup coconut sugar
1 teaspoon cinnamon
½ teaspoon salt
8 tablespoons unsalted butter
Instructions
Prepare the Fruit
Preheat oven to 350°F (175°C). Place berries in an oven-safe dish and toss with 1 tablespoon of flour to help thicken the juices during baking.Make the Crumble Topping
In a medium bowl, combine the remaining flour, oats, pecans, coconut sugar, cinnamon, and salt. Add the butter and use your fingertips to work it in until the mixture resembles coarse crumbs.Assemble the Crumble
Evenly distribute the topping over the berries. If not baking right away, store the topping in the fridge until ready.Bake and Serve
Bake for 30–40 minutes, or until the topping is golden brown and the fruit is bubbling at the edges. Serve warm with a scoop of ice cream.
