1 slice sourdough toast
Butter
Olive oil
1 egg
Salt and black pepper
Chili flakes (optional)

Toast the Bread
Toast your bread to your liking — do this first so it’s ready when the egg is done. Slather with butter while hot.Heat the Pan
Use a small pan (no nonstick). Heat a spoonful of olive oil over medium-high heat until shimmering but not smoking.Fry the Egg
Crack the egg gently into the pan (close to the surface to avoid breaking the yolk). Season with salt and pepper right away.Crisp and Baste
Once the bottom is crisp, tilt the pan and spoon the hot oil over the yolk to cook the top gently, leaving the center soft and jammy.Serve
Place the egg over buttered toast. Sprinkle with chili flakes if you like a little heat.
