Festive Summer Salad
Herby, juicy, and full of crunch — a picnic-friendly salad with real flavor and color.
Ingredients
1 can cannellini beans, rinsed and drained
5 scallions, thinly sliced
2 ears raw corn, kernels cut off the cob
1 cup cherry tomatoes, halved
Handful of mint leaves
Handful of basil leaves
¼ cup red wine vinegar
½ teaspoon red chili flakes
A good drizzle of olive oil
Maldon salt, to taste
Instructions
Prep the Scallions
Place the sliced scallions in a bowl of iced water and let sit for 10 minutes. This softens their bite and adds a nice crunch.Build the Salad
In a large serving bowl, combine the beans, scallions, corn, and cherry tomatoes. Add the red wine vinegar, chili flakes, and salt. Stir gently to combine.Finish and Serve
Drizzle generously with olive oil. Add the mint and basil just before serving. Top with more Maldon salt and a final pinch of chili flakes.
