Chopped Salad
Crunchy, salty, fresh, and just sweet enough — the kind of salad you actually crave.
Ingredients
Romaine lettuce, chopped
Cucumbers, chopped
Carrots, chopped
Radishes, chopped
Feta cheese (omit for vegan option)
Pepperoncinis, sliced
For the Balsamic Dressing
1 shallot, very finely minced
1 small garlic clove, grated
1 teaspoon Dijon mustard
1 teaspoon honey
¼ cup balsamic vinegar
½ cup olive oil
Salt and black pepper, to taste

Make the Dressing
In a small bowl, whisk together the shallot, garlic, Dijon mustard, honey, and balsamic vinegar. Slowly drizzle in the olive oil while whisking, until emulsified. Season with salt and pepper to taste.Assemble the Salad
Start by chopping the romaine and cucumbers — take your time and enjoy the process. Follow with the carrots and radishes. Finish with crumbled feta and sliced pepperoncinis.Serve
