Carrot Ginger Dressing
Creamy, punchy, and vibrant — this Japanese-inspired dressing brightens up anything it touches.
Ingredients
2 medium carrots, peeled and roughly chopped
1 shallot, peeled and roughly chopped
3-inch knob fresh ginger, peeled and roughly chopped
2 tablespoons sweet white miso
6 tablespoons rice wine vinegar
1 tablespoon honey (or agave, for vegan option)
2 tablespoons toasted sesame oil
⅓ cup olive oil (or other neutral oil)
Salt and pepper, to taste
