Butter Lettuce Salad With Tarragon Dressing
Light, crunchy, and herbaceous — a bright spring salad that’s all about texture and freshness. The pine nuts bring just the right amount of richness.
Ingredients
½ cup pine nuts
2 heads butter lettuce
1 bunch radishes
1 cup sugar snap peas
Tarragon dressing
Instructions
Toast the Pine Nuts
Place the pine nuts in a small frying pan over medium to medium-low heat. Stir frequently until golden and fragrant, then remove from the heat and let cool completely.Prepare the Salad
In a serving bowl, arrange the butter lettuce in larger pieces. Use a mandoline to slice the radishes very thin and add them to the bowl. Slice the snap peas diagonally into thin strips and add as well.Toss and Serve
Drizzle the tarragon dressing over the salad and toss gently to combine. Top with the toasted pine nuts and serve immediately.
