Apple Date and Goat Cheese Salad
A crisp, creamy, and subtly sweet salad with buttery lettuce and just the right crunch — elegant enough for company, easy enough for lunch.
Ingredients
1 head of butter lettuce or Bibb lettuce
1 Fuji apple, sliced super fine
½ cup dates, chopped
¼ cup goat cheese
¼ cup roasted and salted pepitas (pumpkin seeds)
1 tsp lemon juice
Maldon salt
Dressing
1 shallot, finely chopped
Juice from 1 lemon
2 tbsp unseasoned rice vinegar
1 tsp agave
⅓ cup olive oil
Salt and pepper
Instructions
Prep the Lettuce
Place the chopped lettuce into a serving dish.Dress the Base
Just before serving, drizzle with lemon juice and a pinch of Maldon salt. Gently toss to coat.Add the Toppings
Layer the apple slices, chopped dates, goat cheese, and pepitas over the lettuce.Finish and Serve
Whisk together all the dressing ingredients and pour over the salad just before serving.
